Mace spice is sweeter and milder, but has a similar flavor to nutmeg. Mace is often used in place of nutmeg when dark colored flecks of nutmeg might ruin the appearance of certain dishes. Ground mace seasoning can be substituted in light colored sauces, clear broths, omelets, and mashed potatoes.
It's often used in spice blends for flavoring meat dishes, stews, curries, savory sauces, homemade pickles, and is a common ingredient in Indian cuisine. The flavor can become bitter if it's cooked too long, so it's best to add mace toward the end of cooking as a finishing spice.
